Red and green chile both come from the same New Mexico chile pepper — the difference is when it's picked. Green chile is harvested young and roasted, giving it a bright, smoky, vegetal punch. Red chile is left to ripen on the plant, then dried and ground into a deep, earthy, slightly sweet sauce.
